Super excited to return to The Ridgehouse at @terraridgefarm on May 16th to kick off a full season of good food and good fun. 

We will be open 2 or 3 weekends every month until its too cold to sit outside, with an ever changing menu featuring my favorite ingredients from throughout the hudson valley.

Vegetable appreciation post! 

Some very aesthetically pleasing and super sweet radishes from @deeprootsfarmny and a crazy looking Blackberry Potato from @norwichmeadowsfarm destined for a purple vichysoisse.
This is a massive ginger plant growing hydroponically in brooklyn at @farm.one. We all know what ginger root looks like, but did you know that it grows huge leaves and beautiful flowers? 

Farm.one prunes the leaves to keep the plant healthy  and flowering. At Chef Fox, we love to utilize the discarded ginger leaves to wrap and flavor things like @terraridgefarm pork and @hudsonvalleyfisheries steelhead trout.

@thegreatjoyfamilyfarm Millet "Aligot" with @5_spoke_creamery cheese, poached apple, and sunchoke. 

Millet, and gluten-free grain, is one of our favorite ingredients to work with and an incredible addition to any cooks pantry. It its extremely nutrient-dense, high in protein and fiber, and a great contributor to healthy soil. Also, it's delicious, versatile, and easy to cook!
