This is a massive ginger plant growing hydroponically in brooklyn at @farm.one. We all know what ginger root looks like, but did you know that it grows huge leaves and beautiful flowers? 

Farm.one prunes the leaves to keep the plant healthy  and flowering. At Chef Fox, we love to utilize the discarded ginger leaves to wrap and flavor things like @terraridgefarm pork and @hudsonvalleyfisheries steelhead trout.

@thegreatjoyfamilyfarm Millet "Aligot" with @5_spoke_creamery cheese, poached apple, and sunchoke. 

Millet, and gluten-free grain, is one of our favorite ingredients to work with and an incredible addition to any cooks pantry. It its extremely nutrient-dense, high in protein and fiber, and a great contributor to healthy soil. Also, it's delicious, versatile, and easy to cook!
